Abstract

The heating process in processing pandan leaves into pandan paste results in chlorophyll degradation. Increasing the stability of chlorophyll can be done by forming a metallochlorophyll complex with a more stable metal such as Zn. The success of Zn-chlorophyll formation is also influenced by adding fillers to protect the chlorophyll compounds. This research aims to determine the effect of varying the concentration of ZnCl2 reagent and the addition of gum arabic on chlorophyll content, physical properties, and color stability of pandan paste as a natural dye. The method for making pandan paste is sorting, crushing, extraction with ZnCl2 (0, 500, 750, and 1000 ppm) and adding gum arabic as a filler (20, 25, and 30%). The resulting pandan paste was analyzed for chlorophyll content, color, total phenolic and flavonoid content, and radical scavenging activity. The design used in this research was a Completely Randomized Design (CRD) with two factors. The data obtained was analyzed for variance, and if it had a natural effect, the DMRT test was continued. The results showed that variations in the concentration of reagents and fillers significantly affected chlorophyll content, color, total phenolic and flavonoid content, and radical scavenging activity. The best pandan paste can be produced with a ZnCl2 reagent concentration of 500 ppm with the addition of 25% gum arabic with a chlorophyll content of 117.69 mg/g, green color intensity -1.91 and color stability level 1.85, total phenolic content 698.34 mg GAE/100 g db, total flavonoid content 43.83 mg QE/ 100 g  db, and radical scavenging activiy 77.31%. Based on the results, knows that metallochlorophyll complex with ZnCl2 reagent and the addition of gum arabic can stabilize the color and antioxidant properties of pandan paste so that it has the potential for natural colorant.
